Our pricing structure is based on carcass weight or hanging weight. It is the most accurate way of pricing since the processor takes this weight before breaking the animal into individual cuts. The hanging weight is NOT the amount of meat you will take home (sometimes called the boxed weight). That will be less than the hanging weight.

 

The weight of each animal can vary widely, so the prices below are an estimate (on the high end). The processor also charges a processing fee that we have estimated for you.

Quarter Beef

A quarter beef will yield about 90 pounds of beef. It will feed a family of four for about six months. It will easily fit in a small chest freezer. It is cut according to our standard cut sheet.

$4.25/lb hanging weight, usually around $600 total (plus $125 processing fees)

Half Beef

A half beef will yield about 175 pounds of beef. It will feed a family of four for about a year. It is fully customizable and will fill a small chest freezer. 

$4.25/lb hanging weight, usually around $1200 total (plus $200 processing fee)

Whole Beef

A whole beef will yield roughly 350 pounds of beef. This will feed a family our size (7) for a year. It is fully customizable and will fill a large chest freezer. 

$4.25/lb hanging weight, usually around $2400 total (plus $400 processing fee)

Quarter shares must be cut according to our standard cut sheet. It includes roasts, steaks, ground beef, cube steaks, and stew meat.

You can fully customize half and whole shares. We provide a cut sheet to guide you in deciding how you want your share cut. A half or whole share is the best choice if you want brisket (cap and flat), skirt and flank steaks (great for fajitas), or any combination of cuts.

Our meat is vacuum sealed, which keeps it fresh for a long time (about 14-16 months) and safe from freezer burn.

In order to follow the laws of the state of Arkansas, beef must either be processed by a USDA butcher shop or bought directly from the farmer/rancher and taken to a custom butcher shop. There are only two USDA butcher shops in the state, and the expense is prohibitive to most customers. We aim to provide our customers with safe and delicious beef for excellent value. Therefore, we choose to sell “shares” of our animals and deliver them for you to a local custom butcher shop. You pay us for the animal and the butcher shop for the processing. The beef is stamped “not for sale” to ensure that none is sold outside of the bounds of the law.
